Shrimp fajitas are Mexican entrées made with shrimp, peppers, onions and wrapped in corn or wheat tortillas that are served with sour cream, salsa, or guacamole. Shrimp fajitas are one of my family’s favorites. The freshly caught shrimp along the seaside resorts in Mexico, grilled and served with juicy pineapple salsa were my inspiration for this dish. The tortillas were made fresh to order and were served in clay plates. Yes, clay enhances the flavor of food, so I used a clay dish to serve my salsa. I like making the tortillas from scratch. I used whole wheat flour, mixed with some kamut flour, millet flour, and some ground flax seed. I do not find such healthy tortillas in the grocery stores, which is why I prefer homemade ones. My version of making fajitas is not only healthy but also very nutritious.
I bake the shrimp that was previously marinated in spices. My mango salsa complements the grilled peppers and onions. Freshly made guacamole accentuates every bite of the Shrimp Fajita.
Shrimp Fajitas

Ingredients
For the tortillas:
- 3 cup whole wheat flour
- 1 cup kamut flour
- ¼ cup millet flour
- 2 tbsp flax seeds powder
- 1 tsp salt
For the filling:
- ½ pound shrimp
- 1 onion sliced
- 1 pepper sliced
- 3 tbsp extra virgin olive oil
- ½ tsp salt
- ½ tsp pepper powder
- 3 tbsp sour cream
For the Mango Salsa:
- 1 yellow mango chopped
- 1 green chili chopped
- 1 tomato chopped
- ¼ tsp salt
- 3 sprigs cilantro chopped fine
For the Guacamole:
- 1 avocado
- 1 green chili
- 1 shallot
- ½ tsp lemon juice
- ¼ tsp salt
Instructions
How to make the tortillas:
- Mix the flours, salt, and enough water to make a malleable dough that can be rolled out. (firm yet soft)
- Make balls and roll them out on a rolling board dusted with flour. Make as many tortillas as possible depending on the size that you prefer. (could be 6-8” diameter)
- Cook them on a griddle without any oil. Flip them over after every minute and remove them once they are cooked. (Usually when brown spots appear on them)
How to make the filling:
- Clean and de-vein the shrimp, wash, drain, and season with salt and pepper.
- Bake the shrimp in oven with some olive oil for 20 minutes at 4000F.
- In a separate pan, fry the onions and peppers in olive oil until caramelized.
How to make the Mango salsa:
- Mix all the ingredients and keep aside.
How to make the Guacamole:
- Pulverize the ingredients in a food processor or blender.
How to assemble the fajitas:
- Take a tortilla, spread some sour cream, arrange the shrimp and fired onions and peppers.
- Roll the tortilla and serve with salsa and guacamole on the side.
Notes
- You could exclude the shrimp and use other vegetables such as grilled zucchini, onions, bell peppers, and carrots. I think that these vegetables will be a good combination with the guacamole and salsa.
- What is the difference between fajitas and tacos? Fajitas have grilled vegetables along with meat, while tacos have raw, diced vegetables in them.
- What can fajitas be served with? Fajitas can be also be served with avocado salad, corn salad or spicy roasted potatoes.
