Mix the flours, salt, and enough water to make a malleable dough that can be rolled out. (firm yet soft)
Make balls and roll them out on a rolling board dusted with flour. Make as many tortillas as possible depending on the size that you prefer. (could be 6-8” diameter)
Cook them on a griddle without any oil. Flip them over after every minute and remove them once they are cooked. (Usually when brown spots appear on them)

Notes
You could exclude the shrimp and use other vegetables such as grilled zucchini, onions, bell peppers, and carrots. I think that these vegetables will be a good combination with the guacamole and salsa.
