Cilantro fish is a quick, healthy dish made with spices, eggs, and cilantro. My son loves Swai fish so much, but it is not available in places other than the Bay Area. So he had to find a way to try other varieties of fish that was readily available to him with a different approach to making them. The cilantro fish that I taught him to cook calls for ingredients in his pantry and refrigerator. This is a fuss-free and easy dish to make when he is busy with his college work.
I have taught my kids not to waste food. In this dish that I created, I let my son add lemon zest which would have otherwise been thrown away. He then uses the lemon for his other meals. Unlike me, my son needs motivation to cook. If the dish is quick, easy, with not a lot to plan and purchase, then he is more likely to make them. Cilantro fish is not made with spices that are freshly ground or roasted, but with curry powder, cumin powder, cilantro, and egg.

Ingredients
- 16 ounces cod fillets
- 1 tbsp curry powder
- 1 tsp cumin powder
- ½ tbsp ginger paste
- ½ tbsp garlic paste
- ¼ tsp pepper powder
- ¼ tsp turmeric powder
- 1 lemon zest
- 1 egg beaten
- 2 tbsp olive oil
- 3 sprigs cilantro
Instructions
How to make Cilantro Fish:
- Wash the fish fillets, drain, and cut into cubes using kitchen shears.
- Mix all the ingredients, and marinate the fish cubes for 15 minutes.
- Bake in in a foil lined tray at 4000F for 25- 30 minutes.
