How to make grilled sweet potatoes:
Pre-heat the oven to 4000F.
Wash and slice the sweet potatoes longitudinally.
Mix all the ingredients for the grilled sweet potatoes and spread them on each of the sweet potato slices.
Arrange the sweet potato slices on an aluminum lined tray and bake the sweet potato slices in the oven for 50 minutes.
How to make mint tahini sauce:
- You could use purple sweet potatoes or yam instead of sweet potatoes.
- Cilantro can be substituted for mint leaves.
- This recipe serves well as an appetizer, snack or side dish.
- You could use store-bought tahini with the mint leaves for the sauce. I have made my tahini by grinding the sesame with the other ingredients.
- Toasting the sesame brings out the nuttiness of the seeds but it is important not to burn them.
- You could grill the sweet potatoes on an indoor grill. I have baked them to get the same flavor.
