Grilled Sweet Potatoes with Mint Tahini Sauce

Grilled sweet potatoes with mint tahini sauce is sweet potato slices grilled with cumin, paprika and avocado oil, and drizzled with a mint-sesame sauce. I enjoyed grilled sweet potatoes with cilantro tahini sauce in the Caribbean islands as a snack by the beach, and I wanted to tweak it by making them with mint-sesame sauce. This dish was quite hot to taste and I found out that they had used scotch bonnet chilies!. Scotch bonnet chilis are really very hot to taste and that was why my tongue was on fire that day. The sweet potatoes were flavorful, bursting with tangy limes. I decided to use Thai green chili instead, and use mint for a fresh taste.

Sweet potatoes are loaded with fiber, vitamins A and C, manganese, etc. This is one vegetable that seems to be forgotten in my household, so I like to trying new and interesting varieties as the sweet potato’s benefits are never-ending. From boosting brain functions and immunity to better eye sight, these orange or purple vegetables are a true star in the kitchen.

Ingredients
 
 

For the grilled sweet potatoes:

  • 2 sweet potatoes
  • 3 tbsp avocado oil
  • 2 tsp cumin ground
  • ½ tsp paprika powder
  • salt to taste
  • 3 sprigs fennel fronds

For the mint tahini sauce:

  • 2 tbsp white sesame (hulled) toasted
  • 1 Thai green chili
  • 1 clove garlic
  • 2 tbsp lemon juice
  • ¾ cup mint leaves chopped
  • 4 tbsp olive oil extra virgin

How to make grilled sweet potatoes:

  • Pre-heat the oven to 4000F.
  • Wash and slice the sweet potatoes longitudinally.
  • Mix all the ingredients for the grilled sweet potatoes and spread them on each of the sweet potato slices.
  • Arrange the sweet potato slices on an aluminum lined tray and bake the sweet potato slices in the oven for 50 minutes.

How to make mint tahini sauce:

  • Grind all the ingredients in a food processor or coffee grinder.

Notes

  1. You could use purple sweet potatoes or yam instead of sweet potatoes.
  2. Cilantro can be substituted for mint leaves.
  3. This recipe serves well as an appetizer, snack or side dish.
  4. You could use  store-bought tahini with the mint leaves for the sauce. I have made my tahini by grinding the sesame with the other ingredients.
  5. Toasting the sesame brings out the nuttiness of the seeds but it is important not to burn them.
  6. You could grill the sweet potatoes on an indoor grill. I have baked them to get the same flavor.
